Stir Fry Vegetables with Ramen Noodles

I'm aware of the bad reputation of ramen noodles, but there are ways to make them yummy and a bit healthier.  Depending on what brand you buy, though, you will need to look carefully at the package to ensure it's vegetarian.

Stir Fry Vegetables with Ramen Noodles

Oriental-flavored ramen – One package, with seasoning packet
Frozen “Asian-style” mixed vegetables – 1 ½ cups
Stir fry oil – 2 tablespoons (I prefer sesame oil.)
Water – one cup

Thaw vegetables in microwave, then add to a hot wok with oil and stir fry until just done but still crisp. Just before finished, sprinkle with one third of ramen seasoning. Remove vegetables from wok, and add 1 cup of water. Bring to a very rapid boil and added ramen noodles and remaining seasoning. Separate noodles as they cook. Return vegetables to wok when moisture is mostly absorbed. Combine well, and serve immediately.

I used to make it exactly like this, but I have been eating this every morning for years now so I've made a few changes. Since I eat this so often, I needed to eliminate the packet once and for all. I do that by adding a clove of garlic, shichimi-togarashi or a minced spicy pepper, and 1/2 Tbs sesame oil to the finished ramen, along with a about 1 tsp. of shoyu.

When the water is boiling I throw a noodle block in there with sliced cabbage on top. I also throw the frozen veggies in there without any preparation. I don't even stir or cover it or anything (L A Z Y) and it still turns out perfect every time! You can tell it's done when the noodles begin to float apart and separate. I add all the seasonings after draining the water to just under the noodles level.

Fried vegetable gyoza is also a yummy addition, but it's good to start it a little before the ramen so they finish at the same time. Serve the gyoza with a shoyu/white sugar mixture.
